What is the difference between organic EVOO and conventional olive oil?
Organic EVOO differs from conventional oil in three certifiable ways: (1) the olives are grown without pesticides, herbicides or synthetic fertilisers; (2) the soil must be free of chemicals for at least 3 years before the first certified harvest; and (3) production is audited by official bodies such as CAAE (Andalusian Committee for Organic Farming). Which olive variety is your organic EVOO made from?
All our organic extra virgin olive oil is made 100% from the Picual variety, grown in our family olive grove in Cordoba. Picual is the most recognised variety in the world, high in polyphenols and oleic acid, with an intense fruity flavour and characteristic notes of olive leaf, green tomato and a peppery finish.

How long does olive oil last once opened?
A quality organic EVOO keeps its optimal flavour and aroma for around 6 months after opening, as long as it is stored somewhere cool (15-18°C), dark and well sealed. Unopened, the oil keeps its properties for up to 18 months from the bottling date. Our bottles and tins always include the harvest date and best-before date.

What is the best way to enjoy an organic Picual EVOO?
Organic Picual EVOO is very versatile: raw, it brings out its full aroma over toast, salads, gazpacho, salmorejo or steamed fish. For cooking, it stands up well to high temperatures (up to 180°C) thanks to its high oleic acid content, making it ideal for sautéing, frying and baking. It best preserves its polyphenols when added at the end of cooking.
